WhistlePig Sazerac
**The perfect balance between rugged and restrained.**
The Sazerac is a gruff, vigorous cocktail, the kind you should grip with your whole hand and sip with gusto. That’s why Merchants of Beverage chose WhistlePig rye to anchor the drink.
Merchants of Beverage were lucky enough to enjoy a Sazerac mixed by Dave Pickerell, partner and Master Distiller at WhistlePig. Here is Dave's special tip for a killer Sazerac, and one that calls on a little history:
The original Sazerac cocktail was made with Cognac, and only one kind of bitters - Creole. However, in the 1870s, an aphid blight in the Cognac grape-growing region of France decimated the crop. What little Cognac could be made was reserved and kept in France. New Orleaners of the time turned to what they knew best - rye whiskey - to replace Cognac. What they found surprised them: rye made a superior Sazerac. To complement this change, bartenders began adding “old fashioned aromatic bitters” to accentuate the spicier profile of rye whiskey. The bitters closest to the original recipes of the time are Peychaud’s and The Bitter Truth Creole bitters, and The Bitter Truth Old Time Aromatic Bitters.
